Annie, overall panel thickness is a factor in establishing a proper
score depth, but its down the list aways.  The first order of biz is to
determine the type of material (FR4 for this example) 2) determine Array
size. 3) determine individual part size.  The larger the part size, the
more leverage you have to break, and conversely the smaller the part the
more force you need to break it.

To understand the mimimum allowable web (remaining material) keep in
mind that .062 FR4 has approx. 7 layers of pile that provide structural
integrity.  Each one is approx. .007".  It is suggested that you retain
at least one layer of pile to maintain this strength.
