I wrote an article back in 2001 called "How to Draw Schematics" that 
addressed this, and it was presented at the IPC Designer's Conference in 
Chicago.

I do not have it with me... but you may be able to get it through the IPC.

I discuss how large to make your symbols - and make them uniform - and 
readable.

Of course... I also discourage the tablecloth-sized schematics that some 
engineers still prefer to use.
