Hi Peter,
Up to 10mm thick is doable (8mm and thinner is better), but anything thicker
than that is pretty challenging. I have used one set of 12mm pallets, but we
were able to add deep bottomside channels the length of the pallet, parallel
to the direction of flow through the wave. This allowed good solder flow to
the TH components. Of course if your tall bottomside components are "in
line" with the TH components, then the deep channels will not be possible.
I'm sure there are other tricks, just keep in mind that the wave becomes
even less predictable than normal when you have to crank up the RPMs to
overcome a thick pallet.
I would recommend considering the options that Carrie suggested.

What is the thickest selective wave soldering pallet that's been used out
there?
I am doing DFM on a double sided THT/ SMT product with a few bottom side SMT
components about 11mm high. I need to provide masking for these devices but
at the same time I am concerned about the excessive wave height required to
reach into the deep pockets.

What are other options to process the board through SMT/wave soldering?
