Does anyone know what's the benefits of having "low mass heating
elements" on convection ovens. I know that one very important benefit is the
fast response time, this type of heating elements get to set-point on a very
short time. But, are there some other pros/cons such as long term problems,
maintenance issues on the future?. What's better?

Thanks for your comments
