This sort of problem is pretty common in all organic compounds, and I am sure your legend ink has ingredients specifically to prevent this.... however, to long, or too high a temperature, can certainly overcome the ingredients in the ink, and give you the color. And, clearly, this problem will be more obvious with white ink, than other colors...
