Less cynically:
I think possibly this is not because it doesn't work, but because it does
away with the main advantage of the soldering process which is its ability to
make hundreds of joints similtaneously. Where u/s is used industrially for
joining it seems to be in welding where joints are made individually, these
range from applications like wirebonding to joining plastics.
