You might want to take a look at two books by Eliyahu M. Goldratt and Robert
E. Fox - 'The Goal' and 'The Race'.
'The Goal' is written as a novel while 'The Race' covers the key reasoning
behind the points made in the other book. Both cover JIT (and why we need
to go beyond it).
Avraham Y. Goldratt Institute has courses (don't know how appropriate for
the line operators) as well as videos.
