The magic word is DI.  After you remove the majority of the ions from the
water to make it DI it seeks to regain them and will dissolve normal
plumbing and things like water heaters, that is why it is distributed
thorough special plastic piping. I would look to the people that make in
line heaters that have no storage but just heat the water that passes
through and see if they have one suitable for deionized water
