Steve,
Solder paste has a working life as well as a storage life.  How many hours was
your soldered paste being spread before storage.  How many hours was it just
exposed to room temperature.  Read the working life specified by the
manufacturer and divide it by 2.  This will give you a more realistic idea if
it can be used the next day.  Also realize that if you have used solder paste
one day, stored it, used it the next (mixed with new paste), some of the paste
will become two days old mixed with newer paste.
