There are a couple of concerns of letting the copper extend to the board edge.
1) Reduced die life. If this is a hi-volume product this could be a factor.
2) Encapsulation. If you are using a film dielectric for coverlay/solder mask you have introduced a spot for potential delimitation.
3) Edge definition. If this is a lower volume job being die cut with a steel rule die, it has the potential to have a "ripple" look along the edge.
4) Sharp. The edge of flex circuits that have the copper extend to the cutline are very sharp. That copper foil can produce a lot of paper type cuts for your operators.
