I have built 6-12 layer boards with V-grooves for breakaways with no
problems.  The tricky part is getting the groove deep enough that the board
is relatively easy to snap, but strong enough to withstand the process and
not break apart during placement and handling.  We had to hold our
suppliers to very tight specs on the amount of material left in after
scoring.  They don't like it and they can charge more for it, but if it
saves you process time you may be able to justify the higher board cost.
When the boards are broke apart the operator needs to hold or support the
board as close to the score as possible, not several inches away so that
the board flexes.  You might also consider a score line cutting machine.
