I would not use that particular lot. Re-order new paste, return the late lot to the distributor, and let them file a claim with the carrier.
But I am assuming you have your solder paste handling procedure ducks all in a row; you specify on every Purchase Order of solder paste the delivery terms (overnight or by courier only), the proper packaging (insulated container with dry ice), shelf life remaining (at least 5 months for a paste with a 6-month shelf life) etc.
If you don't have that boilerplate language on your P.O., then you have no choice but to accept the shipment, monitor the DPMO, and hope for the best. Depending on the brand and type of paste, and the maximum temperature the paste reached during that 6 days, it may well be OK. If you are stuck with it I would refrigerate it immediately. One time reaching room temperature before putting it in the fridge in sealed tubes/jars should not induce any significant amount of moisture from condensation.
And you should always flow down the boilerplate language through an "item type" trigger in your purchasing system. This way if one of your engineers decides to purchase a new paste PN the item type P.O. requirements will automatically be printed on the P.O. for the new paste. But this should also be a part of the paste qualification procedure to ensure it happens.
