Yes, as others have stated, your instruction should be to "fabricate to meet or exceed the requirements of IPC-6012 Class (1,2 or 3)"
The A-600 is just a visual aid to help in understanding and resolving, you don't have to specify 600 anywhere in the documentation.

As for coupons, the fabricator should be placing them on their panels to maintain their own process control. You don't need to add anything to your design in your CAD system unless you want something specific for your internal needs. You might want to request copies of their reports, though
