Mike,

I fully understand the futile debate if I wanted to validate the supplier's measurements.

What about using the viscometer for lot to lot consistency assessment, i.e. I set the baseline to a known good lot and then simply measure the lot to lot variation? Is a viscometer the proper tool for this?

Testing for what?
If you are considering it for goods inwards testing or verifying aged material, then I would urge you to consider other ways. (Print test or extrusion rate or similar.) Unless you can exactly duplicate supplier test conditions (and even then) you are probably in for a world of pain. It is likely your numbers will differ from theirs.  This will give you endless debates back and forth on the meaning of the numbers and possibly needless rejections and resulting "discussions".

If you do go ahead with that then as other 'netters have said you will need the same kit (implicit in above) as your material vendors. Depending on the other materials you wish to investigate you may require more than one type of viscometer. Which ever way you go I would suggest you use your number as an index only not an absolute measurement. You will also need to ask for actual viscosity of each batch to be supplied on C of C (if not now) as some people certify product to be as specified wchich will only mean within range, to get any meaningful data.
Having said that, if you did had the actual viscoity as supplied you would not need to do your own as you would have a measurement you could rely on and do SPC like things with it. 

If you just want to explore rheology the classic Brookfield is really an obsolete method as it doesn't really measure rheology. Those people who give Brookfield data do so only for historical or continuity reasons. There are much better systems, which are faster and less condition of test dependent.
The other problem you could have is sample size, some systems can require a test sample larger than you might have [or can afford if looking at conductives.]
