Our biggest complaint is stinky air from process engineers.

Victor.

It depends.  What are you baking?  If you are only baking out moisture, then nothing.  Closing the vent may give you greater consistency of temperature over the interior workspace.

But, if you are curing adhesives, or drying/curing anything with flammable vapors, you have two issues:  flammability/chamber-go-boom, and exhausting foul smelling gasses into the general work space.  Both are OSHA issues. 
In the case of flammable vapors, the build up of vapors with the vents closed may bring to to the lower explosive limit (LEL) and you have a danger of explosion.  That is why most coating vendors recommend using a class A (explosion proof) oven for curing coatings with flammable vapors.

I know that in our facilities, the most common complaint made to our ES&H folks is stinky air from process chemicals.

What can happen if the vents ports are closed?
