Are you working for a scottish company, then I can understand. If not, I
have not heard the question.
So many wise men have spoken, that all aspects should be covered. I have
only one little thought.  Have you noticed how a good bearnaise saauce or
other sauces never be the same if you in scottish manner save sauce rests
to the next day. This behaviour is actual to a lot of stuff, evenso
solders. Once you have conditioned the paste (correctly, with rolling bars)
it shouldn't leave the actual room, and not be cooled or frozen again.
There MAY be small changes, that I cannot explain, but we noticed that some
fiddling with the parameters had to be done in our MRSI machines.  So, in a
mass production line, I think the scottish method does not give any
advantages.
If any scottish read this he may reply with: " away'n bile yer heed! "
