When we solder stainless we typically silver solder or silver braze the stainless, possible solution would be to silver braze a pad on the stainless then solder using Sn-Pb to the board.

Should be able to solder directly to iron in S/S as long as there is no thick passivation layer or surface chemical enhancement....

Preplate the solder area with Sn or SnPb. You may need a copper underplate.
