Blair,

As a follow-up on the commercial refrigerators, you can look at the following to get an idea of what I was attempting to describe.  I just searched for "commercial refrigerators"

Typically, you can easily line the shelves with SS flat stock, and/or install vertical separators between vertical shelves to keep your reels upright.  Connect your own ESD measures, and/or blow incoming gas through an ionizer at the inlet.
