It ain't clear that the DI is doing it, but it does make sense, since the DI is SO much less conductive, lacking any ions in it, that it could hold a charge a lot better than tap water.
Maybe you want to consider using soft water, to eliminate the chlorides, but retain the ionic strength?

This may be an off the wall question but here goes.

 

We have some misting fans that we use for humidification that we've just
recently put in a deionized water source for. 

 

Now it seems that there's a static charge being generated at the fans that
I've never noticed before. Could it be possible that we're generating a
charge at the fans because of the DI water?
