Our company also use +/-10% for board thickness tolerance. I have hesitated to reply earlier on because I remember it was stated somewhere and has been searching its source with no success. :)

As far as I know, only PERFAG 3C mentions a thickness tolerance.
Chapter 1.2: "The thickness tolerance is +/-10%" and should be measured
"just after lamination, i.e. including the copper foil of the outer
layers.", else "...the customer should consult the PCB manufacturer".

+/-10% is a common thickness tolerance for PCB.
