I know I'm guilty of doing this.  It's too bad they didn't put that information into a footer or header, which could easily be stripped out.  I'm pretty good at trimming emails, but I rarely put email addresses into my Contacts/Addresses, if ever.  I either remember the address, or just use "reply" from the last message from that person/reflector.
