You have two choices.

If your company has a certified gold plate repair person, materials and capacity to do all the assemblies in time then strip and repalte can be done in-house.

The best choise may be to send the assemblies to Circuit Technology Center in Haverhill (Bradford) MA. They we formerly called Circuit Repair Center but changed the name. They could easily wick off the solder, strip the edge down to bare copper, apply the nickle then the gold.

Actually their may be a third choice. If the board supplier didn't meet the PCB build specifications then they are on the hook for these boards. The problem may be the value added parts and labor. They may say it not their fault your incoming inspector didn't catch it before it was built. It  would depend on how much they want to continue to be your  supplier.

Subject: [TN] Edge connector repair

Good morning all,

Here's the scenario - I have assemblies that should have Ni/Au plating
on edge connector but don't; the assemblies are built; can repairs be
made?

Thanks in advance,
