I used these kits in the past for mechanical parts where the plating was
considerably thicker than on PCB's.
They were reliable.
I think that the company could answer your question.
Regarding scrappig I think that as long as there are big enough pads or bare
metal areas for the test there is no problem for one circuit to be repaired
by solder coating.
The problem is that you have to test on a closed circuit, so that it may not
be applicable for any layout.

We have several PCB's produced with Immersion Ag and Immersion Sn
finish.
Is there quick test to check the finish on the PCB to determine which
finish
it is?

The Sn appears greyer than the Ag but the sample size is small.

The drawings do call out the finish, looking for a way to verify which
was
shipped.
