Ken,
You are observing capacitor aging (cap loss) for X7R, X5R and Y5V 
dielectric material sets. This is due to changes in the dielectric 
and can be reversed by heating the parts above the Curie point. Aging 
rates range from a couple % per decade hour to as much as 7% per 
decade hour. Cap loss is the first hour, the same loss in the next 10 
hours, 100 hours etc.
