The next step is to verify the Gun (seal, gaskets air pressure), make
sure you are not introducing air into the applicator. Also verify the
distance of the application in respect to the board.

You're the second one that suggested thinning out the polyurethane but
wouldn't that put even more volatiles in the mix that would need to
escape?

Looks like an automatic application, you could try the following.
Thin the material in accordance to your supplier recommendations
Reduce volume by speeding up the application and also go higher on the
Z- axis away from PCB
