The "bake-able" type UR conformal coatings that Ramon Dehoyos mentions will not cure properly if the coating is too thick and is apt to crack and/or flake off.

I remember one instance where a customer coater with an excellent reputation repeatedly had the coating flake off between 2 tall components several inches in length. I asked him the coating thickness and he told me 2 mils (2 thousandths of an inch). I measured the flakes with a micrometer. They were 7 mils thick. The liquid ran down the sides of the tall components and pooled between them.

During the 10+ years that I worked with conformal coatings I discussed overly thick coatings several times a month. More than a few manufacturers used them or wanted to use them.

More would be better for water proofing but there will probably be some unanticipated consequences.

If you follow directions you can expect things will probably work because they've been done that way before. If you "do your own thing" sometimes it will come back to bite you.
