Hi Glenn,
We have been down this road numerous times with various customers. The
main issue is the material variability. IPC specs on thickness alone
will take up about 4% of the 5% - that does your Cpk in  right there.
Raw material suppliers typically do better than the IPC spec but are
still using up approx. 2.5% and it is build dependent and if you receive
a batch that is out of that range you are stuck with re-doing the
artwork to compensate.  You also need to do your homework on the copper
tooth, type of copper etc. In my experience +/- 6 ohms but not to a Cpk
of 1.33 in a production environment. If you want to pay for works of art
probably can be done.

Impedance +/-5% with a demonstrated Cpk of 1.33.

This could apply to Single Ended 50 ohms or 100 ohms Differential.
Also, this is on a Flex Circuit.
