Like Chris said, for the standards. The rest of the design/style of the
schematic is up to you, including use of non-homogeneous symbols (like
in an FPGA, ASIC or even a relay), off-page connectors, hierarchical
blocks, and lots more.
Readability and organization is usually the key, with multiple schematic
pages being made the same size as the printers page, unless you archive
large format drawings. All too often I see C or D size pages shrunk to
A or B size sheets, and nothing is readable or copy-able.
