Most shops can hold 5, some only 8, some only 10, shops that can hold 5 will
offer 8 or 10 to allow variance...

There is not industry standard as it is the unique project that dictates the
required tolerance. If your current sources cannot provide the level of
tolerance you need then search for other sources. Keep in mind as the
tolerance grows tighter, the price will usually go higher so ask before
dimensioning, do all those tolerances need to be that tight?

Sorry for such a rudimentary question but is there an industry standard
these days on a overall board dimension...edge-edge?  I've talked to
some board houses they can hold +/- 0.005" with no problems and other
have problems holding +/- 0.008".

Does everyone use +/- 0.010 as a general guideline unless something more
critical calls out for a +/- 0.005?

I've been under the impression the past few years that typical houses
can do +/- 0.005 with no problems.
