Rich, look in IPC-HDBK-001, the companion to J-STD-001. Section 4 is on
fluxes and has a listing of the common dicarboxylic acids used in fluxes.
That table was based on articles published by Al Schneider at Alpha Metals.

While I have and can locate several tables of organic acids commonly
used in soldering fluxes & pastes, etc., I seem to recall that some IPC
document contained a rather substantial table of these acids and some of
their physical properties.
Does this sound familiar to anyone?
