Some interesting links on the subject... 
One guy at Surface Conversion Sciences mentions: 

"By the way, reverse osmosis is technically not deionizing. The DI process
usually involves distillation, followed by a treatment with mixed bed
deionizing resins, followed by charcoal and mechanical filtration. From
there, it just depends on how pure you need the water to be. Water readily
absorbs gases from the air and is a potent solvent (ultra-pure water will
dissolve glass, quartz, sapphire, all stainless steels, titanium, aluminum,
etc.) so keeping ultra-pure water "pure" is a matter of how much money you
are willing to spend on purity or on your purity requirements."

Another consideration might be microbs. I once worked in a lab where we
exposed the water in our tank to UV light. This was installed after the
water in the tank started to smell, even though it measured just over 17
Meg-ohms resistivity.

Do Not Drink DI water. It will do some serious damage. For my part, I
wouldn't be comfortable drinking water that comes out of a tube that was
recently filled with liquid caustic or concentrated sulfuric acid. These are
the materials in the columns that water is passed through to get DI water.
