Yes -- If you are upgrading equipment for Pb Free, definitely have the option for Nitrogen added to the equipment.  IF you choose NOT to use the nitrogen, you can do so through the recipe.  It will be easier NOT to use Nitrogen when you are plumbed for it than to Try to use Nitrogen when you are NOT plumbed for it.

I am looking at upgrading our Reflow and Wave Solder equipment for Pb free.  I wanted to know what the consensus is for the requirement of Nitrogen for these two systems. It seems to depend on who you ask some say you will need Nitrogen and others say no.
