If you are certifying an enterprise to ISO 9000 series and you mention a
product with a limited pot life, then you should include in the
enterprise's manual how expiry is determined. If this includes looking
at a clock, then you should certainly state how it is calibrated, using
traceable standards, and its permitted tolerance. This is just another
example of how stupid bureaucracy wastes money. A few years ago, one of
my clients had a solder paste with a manufacturer's open time of 5
hours. He put in his manual that the stencil should be seen to be clean
and free from paste residues at least at the start of the working day
and after lunch! It pays to be as vague as possible with the manual,
where you can legitimately get away with it, and the auditor cannot say
a word.

He was not serious but one of our technicians immediatly starts looking for calibrated clocks and insists that any process with a time window, say pot life on adhesive be monitored with a "calibrated" stopwatch.
