In addition to all of the reasons you've been given so far, also;

- a good, even background for the screen print legend.
- I believe that it's green to provide good contrast under red illumination.
- less waste product washed off the board to dispose of.

I have a simple question but never got an answer.

Why is solder mask on the complete board, not just on the traces?
Because of:
Screen printing
Tradition
??
