Graham:

Just reading all the reponses so far sounds like a lot of work for a
relatively short time period. What about leaving everything the way it is
and ask people to come in after the sun goes down. (Or start real early like
at 3:00 AM) This way folks get to enjoy the hot weather, eat Lobsters, and
work when its a little cooler.

Of course, if your operation runs around the clock then another alternative
is necessary.
