I have done dozens of Cpk studies for P&P machines, and I hope this is the
right way!  I use the program data for the part centroid and angle of
placement for each part, then measure the actual placement location and angle
on 30 panels for that exact same part.  I usually do this for 20 different
parts on each of the 30 panels.  The difference between the programmed
placement location and actual, combined with your process spec for
accept/reject make up the data set for Cpk.
  I would do something similar for dispensing, using the center of the dot
and diameter in place of placement angle.
