There is a free book on flex, written by Joe Fjelstad, an authority in the field. Unfortunately, I cannot find the link, but here's an article on it http://www.pcb007.com/pages/zone.cgi?a=79943.
The link is somewhere related to the PCB007 site, try and dig it up.
