Kathie,
Many moons ago, I took conductivity readings on final rinse chambers, that once
statistically analyzed, lead to the installation of a controller to help
minimize water usage while maximizing cleaning.
You may want to consider tracking both so as to have a data set to relate back
to in a cause/effect relationship.
