If you design it as a bookbinder (unbonded flex layers of progressively
different lengths) the circuit  will be vastly more flexible and formable.
It will also be more expensive and fewer vendors will be interested in
bidding and building.

Unbonded layers may cause a variation in impedance based on varying shield
separation from the pairs, but differential pairs are less sensitive to
shield location than microstrip or stripline and in the designed condition
the shields should be snug against the conductor layers.

Easily modeled and tested.
