I was looking into this some time ago and found some good design guidelines
(big files though)on the following site.

As yet, I haven't done an actual design yet.

IPC-2223 naturally.

Joe Fjelstad has written a couple of books;

Flexible Circuit Technology (ISBN 0-9667075-0-8)
An Engineer's Guide toFlexible Circuit Technology (ISBN 0-901150-34-7)

He also does a short course I'd like to get to one day...
